Małgorzata Główczewska-Chudzik is an avant-garde culture designer, culinary creator, and dietitian, as well as the originator of Green Way cuisine. She passionately promotes the idea of wholesome plant-based cooking, believing it can be not only tastier than traditional cuisine but also better aligned with modern health and ecological needs. In designing dishes, she harmoniously blends the culinary traditions of different cultures and regions with current scientific knowledge about human and environmental health. Her exceptional sensitivity and talent bring it all together, creating a cuisine that is modern yet authentic.
Green Way cuisine follows the development of human nutrition science. Therefore:
Green Way bases its cuisine on seasonal vegetables and fruits and changes the menu depending on the season. As a result, our meals contain more vitamins and valuable nutrients, add variety to our cuisine, and are also affordable.
Green Way follows a local sourcing policy. The main reason is to avoid burdening international transport and help prevent climate change. Relying on local products is also beneficial for the local communities where we run our bars for environmental reasons (use of regional natural resources), economic reasons (income for the local community), and social reasons (jobs and regional development).
Our beginnings go back to the Tri-City area. We opened the first Green Way bar in April 1997 on the Sopot "Monciak" promenade. The initiator of the venture was Marek Tomasz Chudzik, a pioneer of Polish vegetarianism, a promoter of a healthy lifestyle, and an active participant in countercultural social movements. His commitment, knowledge, and vision made Green Way more than just a place to eat, creating a space that connected health, social, and ecological values.
Today, Green Way still operates on the Sopot Monciak in a new, more prestigious location, not far from where it all began. This place is not only a continuation of the story but also proof that the values at the heart of Green Way are just as relevant today as when it all started.
